Zucchini pate recipe

Zucchini Paste is a delicious Polish dish which is used as a sandwich filler or eaten on crackers.

  • 2 zucchini medium
  • 6-7 dried tomatoes in oil
  • 1 cup cheese grated
  • 1 cup breadcrumbs
  • 1/2 cup semolina
  • 1/3 cup oil
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon cayenne pepper, or to taste
  • salt and pepper to taste


  1. Dried tomatoes cut into cubes.

  2. Grate the unpeeled zucchini. Sprinkle with salt and set aside for 30 minuts. Squeeze zucchini to drain out as much liquid as possible.

  3. Put drained zucchini in a bowl. Combine the zucchini, breadcrumbs, cheese, oil, semolina, tomatoes a spices. Mix everything thoroughly. 

  4. Preheat the oven to 180 degrees C.

  5. Spoon the mixture into the prepared loaf tin. Smooth out the surface with the back of a spoon.

  6. Bake in the preheated oven for 1 hour. Remove from oven and let cool in the tin.
