Mushroom and Leek Soup

This delicious soup can be prepared in 45 minutes or less.

Servings 3 people


  • 2 medium leeks sliced
  • 1 pound fresh mushrooms (450 g)
  • onion chopped
  • 3 cups chicken broth
  • 1/2 cup sour cream 30%
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon dried thyme
  • 1/3 teaspoon ground nutmeg
  • 1/3 teaspoon cayenne pepper or to taste
  • 1/2 teaspoon salt
  • 1/3 teaspoon freshly ground black pepper


  1. Chop the mushrooms into small pieces.

  2. In a large pot over medium high heat, saute the mushrooms, onion and leeks in the butter until tender.

  3. Add the broth and simmer for 20 minutes. 

  4. Add the sour cream, thyme and other spices. Cook for 5 minutes. 

  5. Serve hot with croutons.
