German Pizza (Flammkuchen)

When most people think pizza, they think Italy, but Flammkuchen, the crispy and smoky German pizza, is definitely worth your time!

Flammkuchen has to be one of my favorite German dishes. It is delicious!

For the Dough

  • 1 pound (500 g) flour
  • 1/2 teaspoon salt
  • 11 ounces (320 g) warm water
  • a little olive oil

For the Toppings

  • 12 strips of bacon cut into small squares or cubes
  • 2 onions sliced
  • 9 ounces (250 g) crème fraiche or sour cream
  • 1/3 cup shredded mozzarella cheese (optional)
  • nutmeg, salt, pepper to taste


  1. In a large bowl, mix together flour, salt, water, and oil. Mix until a dough begins to form, the turn the dough out onto a lightly floured surface and knead until it is soft and smooth, 3-5 min. Set the dough aside and cover it with a towel.
  2. Preheat oven to 420 F (220 C).

  3. Melt butter in a pan, add onions and fry for a couple of minutes. Add bacon, stir and heat through. If everything is sliced thin enough, this step is unnecessary.
  4. Divide the dough into 4 parts,  roll out thinly and place on a thick baking sheet. 

  5. Spread creme fraiche on top of dough, then spread onions and bacon on top of it. Season with nutmeg, salt and pepper.

  6. Top with mozzarella cheese (optional). 

  7. Bake for 20-25 minutes, checking for browning of the top. Crust should be hard when done.
