Easy Broccoli Salad Recipe

  • 1 bunch broccoli  tops only, broken into small pieces
  • 5 hard-boiled eggs chopped
  • 4 pickling cucumbers diced
  • 1 cup corn from a can, well rinsed& leaked
  • 2-3 tablespoons mayonnaise
  • salt and pepper to taste


  1. In a medium sauce pan, bring 4 cups of salted water to a boil. While waiting for the water to boil, prepare a large bowl with ice water.

  2. Add broccoli florets to the boiling water and cook until tender, 1 to 2 minutes. Remove with a slotted spoon and place in the prepared bowl of ice water. When cool, drain florets in a colander.

  3. Combine all the salad ingredients, tossing well to mix.

  4. Let stand at least 1 hour in the refrigerator (can be made the day before).
